Smokey BBQ Chicken

BBQ temperature: 110 to 120°C
Core temperature: 74°C

  • Lockable barbecue
  • Digital core thermometer
  • Charcoal or briquettes
  • Your favorite smoking wood*


  • * Cherry wood goes well with chicken. But other types like oak, beech, hickory or apple wood will do just fine too!

Step by step

Step 1: Preparation

AllBrine preparation:

Dissolve 100 grams of AllBrine No.1 in 1 liter of hot water. Allow to cool to refrigerator temperature (min. 7˚C).

Chicken preparation:

Place the chicken in the refrigerator submerged in the AllBrine for a minimum of 1 and a maximum of 12 hours. Then rinse under the cold tap and pat dry with kitchen paper. Rub with the BBQ Rub.

Step 2: Barbecuing

Fire the barbecue as steadily as possible at 110 to 120˚C. Add smoking wood and slowly barbecue the chicken in a closed grill until a core temperature of 74˚C. Remove the chicken from the barbecue and let rest for at least 15 minutes. Meanwhile, fire up the barbecue for grilling. Grill the chicken for a nice color and crispy crust.

Step 3: Serve

cut the chicken into pieces and serve it. Or pick the chicken and serve on a bun with coleslaw and BBQ sauces like “Smokey Pulled Chicken”. Enjoy
