Fruit Cobbler

Ingredients:

For the filling:

  • 1 kg of Fruit
  • 250 gr. of Sugar
  • 1 vanilla pod
  • 1 tablespoon cornstarch
  • Juice of half a lime or lemon.

For the dough:

  • 360 gr Self-rising flour
  • 6 tablespoons sugar
  • 1 teaspoon salt
  • 720 ml Whipped cream

Preparation:

BBQ temperature: 170°C

What else is needed:

  • Lockable barbecue
  • Charcoal or briquettes
  • Oven dish or Dutch Oven

Tips:

  • Delicious with a scoop of ice cream and/or whipped cream.

Step by step

Step 1: Preparation

Prepare fruit filling:

Cut the vanilla lengthwise and scrape out the black pith, mix this with the sugar with the cornstarch. Cut the fruit into pieces. Mix the fruit with the sugar/cornstarch/vanilla and the lemon or lime juice.

Prepare dough:

Mix the flour with the sugar and salt. Then mix in the whipping cream to form a dough/batter.

Step 2: Barbecuing

Put the fruit filling in the bowl and spoon the dough on top. Fire the barbecue as steadily as possible at 170  ̊C. Bake in a closed barbecue until the fruit filling bubbles.

Step 3: Serve

With a scoop of ice cream or whipped cream. Enjoy!
