  • Lockable barbecue
  • Charcoal, briquettes or pellets
  • Firelighters
  • Cast iron pan

Tips

  • Make it extra American with a dash of Bourbon.
  • Add some maple syrup for an extra sweet variation.
  • Or a fresh pepper for some spice.
  • For a vegetarian jam, replace the bacon with 2 extra onions and a handful of chopped walnuts or pecans.

Step by step

Step 1: Preparation

Cut the bacon into small cubes and the onions into half rings. Fire up the barbecue to 160˚C.

Step 2: Grill

Put a cast iron pan in the barbecue. Fry the bacon bits until crispy. Add the onion rings and fry for a moment. Add the sugar. Add a good dash of Carolina Mustard Sauce and a dash of balsamic vinegar to taste. Close the barbecue and let it simmer for at least one hour. Check in regularly and add some water if the jam becomes too thick. Season to taste with salt and pepper.

Step 3: Serve

This divine bacon jam is the ultimate condiment on your burger or sandwich. And the perfect accompaniment to cheese or pâté on your drinks board.
