Veal tartare starter recipe from the BBQ

Ingredients

For one tartare to eat with 4 to 6 people as an appetizer or snack. Use 80 to 100 grams per person

  • 400 grams of lean veal
  • 1 egg yolk
  • 1 tablespoon of capers
  • Half chopped red onion
  • 1 tablespoon of diced pickle
  • Grate Goods SPG rub

Materials

  • Cold smoke generator (if you don’t have one, you can also use a smoke tube or cardboard egg carton. Fill it with smoke dust and light it at a corner)
  • Smoke dust
  • Mixing bowl
  • Smoking board
  • A good carving knife
  • Cutting board

Step by step

Step 1: Preparation

Cut the veal very finely (2 to 3 mm). A good knife is recommended for this.

Step 2: Preparation

Spread the veal on the smoking board and smoke it in a closed BBQ for about 30 minutes. Then let the smoked veal cool in the refrigerator for 15 – 30 minutes. Then mix the smoked veal with the egg yolk, capers, red onion, pickle and Grate Goods SPG rub. This will add a great flavour to the dish.

Step 3: Serve

Serve the veal tartare on “Texas toast” and some loose slices of pickle. Hand it out from a bowl, on the go or divide it over plates.
