BBQ Chicken lollipops recipe



  • As a snack: 3 to 4 drumsticks per person

  • Closeable barbecue
  • Aluminum foil
  • Paper towels
  • Cutting board

Step by step

Step 1: Preparation

  • To turn chicken drumsticks into real chicken lollipops, the first thing you do is cut the skin and tendons halfway through the bone.
  • Then push the skin towards the knuckle of the bone with the knife.
  • Take a piece of paper towel for more grip and push the skin with the cartilage away from the knuckle.
  • Then push the meat down so that a nice “ball” is formed. Cut away the visible tendons.
  • Next, wrap the freed piece of bone in aluminum foil so the bone stays nice and clean.
  • Finally, season the meat generously with the Grate Goods Pork & Poultry Rub.

Step 2: Grill

Bring the barbecue up to temperature, about 140 – 160°C. Barbecue the chicken lollipops for 30 – 45 minutes until they reach a core temperature of at least 72°C.

Step 3: Serving

Serve the BBQ chicken lollipops as a snack with, for example, Grate Goods Mississippi Comeback sauce. This is guaranteed to be a real treat!
