Ingredients

Step by step

Step 1: Preparation

Divide the cauliflower into large florets . Brush the florets lightly with olive oil and sprinkle with some sea salt. Using a peeler or cheese slicer, cut long slices of the cucumber lengthwise. Put the cucumber in a bowl, add a touch of pepper, salt and sugar and a dash of vinegar. Store in the refrigerator.

Step 2: Preparation

Fire up a sealed barbecue to 150-160˚C. Keep this temperature as steady as possible. Roast the cauliflower in the hot barbecue until al dente.
Meanwhile, in a skillet, heat (warm, do not boil) the butter together with the Grate Goods California Hot BBQ Sauce. Roll the cauliflower florets through the hot sauce and remove the pan from the heat.

Step 3: Serve

Serve the cauliflower florets in a flour tortilla with a leaf of romaine lettuce and the pickled cucumber.
