  • Lockable barbecue

  • Aluminum foil
  • Charcoal or briquettes
  • Your favorite smoking wood*


  • * Oak or Hickory goes well with beef. But other types like apple, beech, mesquite or cherry will do just fine too!

Step by step

Step 1: Preparations

One day in advance; rub the meat generously with the Beef or Steak Rub.

Step 2: Grill

Add smoking wood and first barbecue the ribs to a core temperature of 64 to 68˚C. Wrap in aluminum foil and place them back on the grill. At a core temperature of 92˚C, the ribs are done. Remove from the barbecue and let them rest in the foil for at least half an hour.
