Pulled Pork

Preparation:

Preparation: 24 hours marinating
Cooking: 7 – 14 hours
BBQ temperature: 110 to 120°C
Core temperature: 88°C

What else is needed:

  • Lockable barbecue
  • Digital core thermometer
  • Aluminum foil
  • Charcoal or briquettes
  • Your favorite smoking wood*

Tips:

  • * Apple wood goes well with pork. But other types like oak, beech, hickory or cherry wood will do just fine too!

 

  • Serve on a soft bun with Crispy Coleslaw and Kansas City Style Red Sauce or Carolina Style Mustard. Enjoy!

Step by step

Step 1: Preparation

AllBrine Preparation:

Dissolve 100 gram AllBrine Color in 1 liter of hot water. Allow to cool to refrigerator temperature (min. 7˚C).

 

Meat Preparation:

Injecting or marinating: Generously inject the pork neck with the Allbrine solution. Or submerge in the AllBrine for 48 hours. Rinse the pork neck under the cold tap and pat dry with kitchen paper. Rub in with the BBQ Rub.

Step 2: Barbecuing

Depending on factors such as the meat and the (stable) temperature in the barbecue, it can take 7 to 14 hours to barbecue a pulled pork. Fire up the barbecue as steadily as possible at 110 to 120˚C.

Add smoking wood and first barbecue the pork neck to a core temperature of 64 to 68˚C. Then wrap in aluminum foil and place back on the barbecue. At a core temperature of 88˚C the pulled pork is ready. Then remove from the barbecue and let rest for at least half an hour in the foil.

Unpack and mash with two forks.

Step 3: Serve

On a soft bun with Coleslaw and Kansas City Style Red BBQ Sauce or Carolina Style Mustard BBQ Sauce. Enjoy!
